I just bought this French Canadian computer keyboard off the internet, and when I plugged it in, it worked just like an American keyboard, except for the French symbols on the keys. It didnt come with any software to install, although it was purchased brand new. Do any of you computer people out there know how to fix this?

I believe you need to change the language settings in Windows to set it to a standard french typing.

Or get a bigger hammer.
I can't find what I was looking for in Control Panel>Keyboard or in Control Panel> Regional Settings

Take the name of the keyboard and Google it. Try and find drivers or software that way.
I don't think French keyboard software is built into Windows by standard, you'll probably need to download it.
When you plug it in, Windows looks at it and goes:
Oh it's a keyboard, I'll just use my default settings for keyboard.
You push the extra buttons and it thinks:
Eh? what on earth does this signal mean? ack I'll just ignore it.
